Breakfast on the 21 Day Fix

For breakfast, I whipped up a nice omelette with tomatoes, mushrooms, onions, artichoke hearts, and avocado. I discovered an ear of corn in the fridge from dinner a few days ago, so I scraped the kernels off and fried those up alongside everthing.


Top with some spicy salsa, and we have a winner.

This uses 1 yellow, 1 red, 1 green, 1 blue, and a teaspoon of olive oil.


Eating well is not hard; it just takes a little bit of planning. And let me tell you, I’m plenty full.

Now it’s time to go debug some code!

PS: top it off with a nice espresso…
